Description: Make a large saute pan over medium heat and add a 2 count of olive oil. Bring the onion and caramelize for about 11 to 16 min. Stir in the coconut milk and ginger and simmer for 6 minutes to reduce a bit. Season mixture with salt and pepper, to taste, chicken stock and cook for 11 minutes to heat and allow the flavors to come together. Finally serve it and season with pepper, if desired.
